Over Easy Eggs w. Lemon + Pesto

Preparation Method In a cast iron pan, cook eggs your favourite way, over medium heat.  Roughly chop fresh leafy greens: spinach, kale, chard, romaine, and place in bowl. Shred cabbage, and grate carrot. Add to bowl.  Add eggs, scooping pesto on top. Add lemon, and sprinkle with pine nuts, and any other seasoning you wish.
