Simple is best. Especially on those busy mornings. Here is one of my favourite go-to egg recipes. Please enjoy one of our family favourites!
- cage free / free range egg(s)
- basil pesto
- fresh lemon, slices
- pine nuts
- leafy greens
- shredded purple cabbage
- grated carrot
- sea salt + pepper
- In a cast iron pan, cook eggs your favourite way, over medium heat.
- Roughly chop fresh leafy greens: spinach, kale, chard, romaine, and place in bowl. Shred cabbage, and grate carrot. Add to bowl.
- Add eggs, scooping pesto on top. Add lemon, and sprinkle with pine nuts, and any other seasoning you wish.
