Simple is best. Especially on those busy mornings. Here is one of my favourite go-to egg recipes.  Please enjoy one of our family favourites!


  • cage free / free range egg(s)
  • basil pesto
  • fresh lemon, slices
  • pine nuts
  • leafy greens
  • shredded purple cabbage
  • grated carrot 
  • sea salt + pepper 

Preparation Method

  1. In a cast iron pan, cook eggs your favourite way, over medium heat. 
  2. Roughly chop fresh leafy greens: spinach, kale, chard, romaine, and place in bowl. Shred cabbage, and grate carrot. Add to bowl. 
  3. Add eggs, scooping pesto on top. Add lemon, and sprinkle with pine nuts, and any other seasoning you wish.
