Do you ever miss that comforting, creamy tomato soup your mom used to make when you were a kid? Well this recipe fills the void, it tastes great, and is even dairy free. This recipe is a slightly modified version from: healthfulpursuit.com
Ingredients
- 12 organic Roma tomatoes
- 1 cup sun dried tomatoes
- 1 cup raw macadamia nuts, soaked overnight
- 1 teaspoon sea salt
- ¼ cup fresh basil
- ½ teaspoon cayenne pepper, optional
- ¼ teaspoon black pepper
- 2-4 cloves garlic
- 6 cups hot water
Preparation Method
- Add all above ingredients to a high power blender and blend for about 5 minutes.
- Pour soup into a large pot and bring to a low boil, reduce to simmer and let the flavours combine.
Note: The trick is in the nuts. I wouldn’t omit these from the recipe, as they give the soup SO much delicious flavour.
