Rhubarb is in season but it can be tricky to use in recipes without adding any sugar. This recipe uses local honey, and freshly squeezed orange juice. 


Ingredients

  • 6 cups rhubarb – or enough to fill a glass baking dish
  • 1 Valencia orange
  • 1 cup raw, local honey
  • A tiny bit of water, to barely line the bottom of the glass dish

Preparation Method

  1. Preheat oven to 350 degrees
  2. Cut rhubarb into 1″ pieces
  3. Barely cover the bottom of the glass baking dish with water
  4. Grate orange zest, and squeeze the juice into the glass baking dish
  5. Add rhubarb, zest, and drizzle honey; mix until rhubarb is coated in honey + juice
  6. Bake for 20-30 minutes, or until the rhubarb is soft.

Serve warm over chopped pear, or apple.
