This caesar is made with the traditional romaine lettuce, but you can make a killer version with kale, too. I constantly experiment, and sometimes things work out better than others. 


  • 1 – 2 heads organic romaine 
  • toasted pumpkin seeds
  • parmesan cheese, optional 
  • 2 lemons, juiced
  • 1/2 c olive oil
  • 2 garlic cloves
  • 2 egg yolks 
  • 1 heaping Tbsp Nutritional Yeast 
  • sea salt + pepper, to taste

Preparation Method

  1. Tear up lettuce, and toss into a large bowl.  
  2. Make dressing: In a 1 l. mason jar (with tight-fitting lid), combine all other ingredients. Shake very well. 
  3. Pour all over salad, just before serving. Garnish with seeds, and parmesan, if using.
