This caesar is made with the traditional romaine lettuce, but you can make a killer version with kale, too. I constantly experiment, and sometimes things work out better than others.
Ingredients
- 1 – 2 heads organic romaine
- toasted pumpkin seeds
- parmesan cheese, optional
- 2 lemons, juiced
- 1/2 c olive oil
- 2 garlic cloves
- 2 egg yolks
- 1 heaping Tbsp Nutritional Yeast
- sea salt + pepper, to taste
Preparation Method
- Tear up lettuce, and toss into a large bowl.
- Make dressing: In a 1 l. mason jar (with tight-fitting lid), combine all other ingredients. Shake very well.
- Pour all over salad, just before serving. Garnish with seeds, and parmesan, if using.
