This Caesar is made with Romaine lettuce, but you can make a killer version with kale too. I constantly experiment, and sometimes things work out better than others, but it’s always fun to not follow a recipe exactly.
1 – 2 heads organic romaine
toasted pumpkin seeds
parmesan cheese, optional
2 lemons, juiced
1/2 c olive oil
2 garlic cloves
2 egg yolks
1 heaping Tbsp Nutritional Yeast
sea salt + pepper, to taste
Tear up lettuce, and toss into a large bowl.
Make dressing: In a 1 l. mason jar (with tight-fitting lid), combine all other ingredients. Shake very well.
Pour all over salad, just before serving. Garnish with seeds, and parmesan, if using. Enjoy.
