A truly delicious, sugar-free, no-bake (raw!) cake made by a dear friend. I had 2 pieces, but I could have eaten the whole thing.
Ingredients
FILLING
- 4 cups fresh blackberries
- 1 cup shredded coconut, unsweetened
- 1/4 – 1/3 cup raw honey, depending on your sweet tooth
- a pinch, or 2 of sea salt
- 1 tsp pure vanilla extract
CRUST
- 2 cups dates, soaked overnight
- 1/2 cup cocoa powder
- 1 cup shredded coconut, unsweetened
- a pinch, or 2 of sea salt
Preparation Method
- Soak dates overnight, in water to cover.
- The next day, drain date soak water (you can save to sweeten a smoothie!) and pop dates in the blender. Add cocoa, coconut + sea salt –then pulse to form a sticky batter.
- Coconut oil a glass pie plate, including the sides, then dump contents of blender in the center. With damp hands (this helps keep the mixture from sticking), press mixture down evenly along the bottom, as well as the sides of the pie plate.
- Next it’s time to make the filling: Add berries, coconut, honey, vanilla + sea salt to blender and process until thick and creamy.
- Pour filling mixture on top of crust and pop in the freezer to set for 2-3 hours.
Note: Remove from freezer, and transfer to the fridge until just before serving.
