Sautéed Cabbage with Eggs & Sauerkraut

Overview

If I were stuck on a desert island and I could only bring 3 foods, one of them would be cabbage.

Ample proof is available showing cabbage to have more medicinal value than any other natural food. It helps heal stomach ulcers and may help prevent cancer. Colon, prostate, and breast cancer risk are minimized with good amounts of cabbage in the diet. Ingredients

  • 2-3 cups green cabbage, or a mix of green + red
  • 4 free range eggs
  • a big handful of fresh cilantro
  • Lots o’ unpasteurized sauerkraut
  • sea salt + black pepper, to taste
  • a generous sprinkle of chipotle pepper powder

Preparation Method

  1. Heat cast iron or stainless steel pan to medium heat, and add a Tbsp. of virgin coconut oil.
  2. Roughly chop cabbage and add to hot pan.
  3. Once cabbage has softened, crack the eggs into the pan.
  4. When the egg whites just start to turn solid in colour , give them a gentle mix with a fork.
  5. Add cilantro and spices and let eggs cook through.
  6. Serve in big bowls and once cooled a bit, top generously with sauerkraut {we used our homemade ‘kraut in this recipe} Enjoy!
